Quinoa Salad

If you are looking for a refreshing salad, this is it! My whole family enjoyed it. I'm not a big quinoa fan, but this one won me over. I think it's because I loved the colors all coming together.  I usually buy the white quinoa but this one was a black quinoa that I bought at Whole Foods. And it was gorgeous. I couldn't stop enjoying the little sprout that popped out, a light color against the dark hull.

Ingredients
1 cup dry quinoa (white, red, or mixed)
1/4 cup diced bell pepper (red, yellow, or orange)
1/2 cup diced cucumbers (seeded)
1/2 cup chopped cilantro
1/2 cup diced tomatoes
1/8 cup chopped red onions
1/2 cup raisins (unsweetened)
2 Tablespoons fresh lemon or lime juice


Directions
Rinse quinoa in cold water using a mesh strainer
Boil 1 1/2 cups of cold water, add quinoa and bring back to a boil. Boil for 3 minutes. Cover and simmer on low heat for about 15 minutes (you can also use a rice cooker for this0
When done, fluff with a fork and cool.
Transfer quinoa to a large bowl. Add the rest of the ingredients.
Add pepper and no salt seasoning to taste.


Yields about 4-6 servings

  1. Note to self: Read the part about rinsing the quinoa before cooking. It doesn't come out as good if you don't rinse it first.
    Quinoa is my new favorite food, and this lekapī looks keu a ka ʻono! Mahalo!
